Ingredients

  • 3 Tbsp. margarine
  • 1 lrg onion, diced
  • 5 c. boiling water
  • 2 Tbsp. chicken bouillon granules
  • 1 1/2 lb potatoes, peeled and sliced 1/2 inch thick
  • 2 c. shredded carrots
  • 2 Tbsp. minced parsley
  • 1 tsp curry pwdr
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions

  1. In a 3-qt saucepan over medium heat, saute/fry onion in margarine for 5 min. Add in water, bouillon and potatoes. Bring to boil. Cover and simmer till potatoes are tender. Puree. Add in carrots, parsley and curry pwdr. Simmer 15 min. Add in salt and pepper.
  2. Makes 8 servings.
  3. [] If you really dislike curry pwdr, it can be omitted from this recipe. A littlesmidge of allspice would be a good replacement for the curry. []
