Ingredients
- 1 pkg. (3 ounce.) lime gelatin
- 1 teaspoon salt
- 1 c. boiling water
- 2 tbsp. vinegar
- 1 teaspoon grated onion or possibly onion juice
- 1 c. lowfat sour cream
- 1/2 c. mayonnaise
- 2 c. chopped cucumbers

Cucumber Cream Salad
Servings: 4
Directions
- Dissolve gelatin and salt in boiling water. Add in vinegar and onion. Refrigeratetill very thick. Blend in lowfat sour cream and mayonnaise. Then mix in cucumbers. Spoon into individual molds or possibly a 1-qt mold. Refrigeratetill hard. Unmold on crisp greens. Makes about 4 c., or possibly 8 side salads.
