Ingredients

  • 4 x potatoes sliced lengthwise 1/4" thick
  • 1 c. mayonnaise
  • 1 sm minced peeled white onion
  • 3 Tbsp. minced fresh parsley
  • 1 Tbsp. soy sauce
  • 1 Tbsp. crushed dry oregano
  • 1/2 tsp garlic pwdr
  • 1/4 tsp salt
  • 1/4 tsp grnd black pepper
  • 1 1/2 c. crushed crackers
  • 1 c. grated Parmesan cheese

Directions

  1. Preheat oven to 350iF. Spray a baking sheet with vegetable cooking spray.
  2. Place potatoes in a covered vegetable steamer and steam for 12 min till tender but not falling apart; drain and cold.
  3. In a medium bowl, stir together mayonnaise, onion, parsley, soy sauce, oregano, garlic pwdr, salt and pepper.
  4. Lay potato slices in a single layer on a clean surface; liberally brush with mayonnaise mix. Dip each slice in crushed crackers and transfer to prepared baking sheet (may have to bake in batches). Sprinkle with Parmesan cheese and bake for 12 mintues, or possibly till cheese is melted and golden brown.
