Crawfish And Egg Salad

Ingredients

  • 3 x Large eggs, hard boiled
  • 1 Tbsp. Durkee's famous sauce
  • 1 lb Minced crawfish or possibly shrimp
  • 2 Tbsp. Mayonnaise
  • 1 x Salt, if needed
  • 2 Tbsp. Dill pickles, finely minced
  • 1 tsp Red cayenne pepper
  • 1 tsp Poupon mustard

Directions

  1. To cook crawfish: In a saucepan bring 2 qts water to boil with 2 tsp salt and 1/2 tsp of red pepper. Add in peeled crawfish tails to water. Bring to boil and remove from heat immediately. Drain and cold. Chop hard-boiled Large eggs. Chop crawfish and mix with Large eggs. Add in pickles. Mix mustard, Durkee's, and mayonnaise and add in to egg mix. If needed, add in more pepper and salt.
