Ingredients

  • 1 c. water
  • 3/4 c. sugar
  • 2 c. cranberries rinsed, picked over
  • 1 bot dry white wine - (750-ml) such as a Pinot Grigio chilled
  • 2/3 c. orange juice
  • 1 x thinly-sliced orange cut crosswise
  • 1 x thinly-sliced lemon cut crosswise
  • 1 x tart apple halved, cored, and cut into wedges
  • 1 1/4 c. club soda chilled

Directions

  1. Place water and sugar in medium saucepan over medium heat. Bring to boil. Cook till sugar dissolves, 2 min. Add in cranberries. Simmer, uncovered, 20 min.
  2. Pour through sieve, pressing on cranberries to release all juices; throw away cranberries. Chill cranberry syrup till cool, 2 hrs. (Can be made up to 5 days ahead.)
  3. In large pitcher, combine chilled cranberry syrup, wine, juice, orange, lemon and apple. Chill 2 to 4 hrs.
  4. To serve, add in club soda. Using slotted spoon, place fruit in wine glasses, dividing proportionately. Pour in sangria, dividing proportionately. Serve chilled.
  5. This recipe yields 6 servings.
  6. Comments: Buy hard, plump, shiny cranberries which are red to reddish black in color. Avoid bags which have shriveled cranberries. Chill cranberries right in their bags (twist-tied airtight once open) as long as six weeks. Wash them only when ready to use. Cranberries can be frzn in their bags up to one year.
