Ingredients

  • 3 c. All-purpose flour
  • 1 c. Yellow cornmeal
  • 2 tsp Baking pwdr
  • 1/2 tsp Salt
  • 3 stk unsalted butter, softened (1 1/2 c.)
  • 1 1/2 c. Sugar
  • 2 lrg Large eggs
  • 2 tsp Vanilla
  • 2 c. Dry cranberries

Directions

  1. Preheat oven to 350F.
  2. In a bowl whisk together flour, cornmeal, baking pwdr, and salt. In a large bowl with an electric mixer cream together butter and sugar till light and fluffy and beat in Large eggs, 1 at a time, beating well after each addition. Add in flour mix and vanilla and stir till combined well. Stir in cranberries.
  3. Drop dough by rounded tsp. 2 inches apart onto greased baking sheets and bake cookies in batches in middle of oven 16 to 18 min, or possibly till golden brown. Transfer cookies with a spatula to racks to cold. Cookies keep in airtight containers 5 days.
  4. Makes about 48 cookies.
