Cold Fruit Soup

Ingredients

  • 1 x ripe cantaloupe, peeled and minced
  • 4 x ripe peaches, peeled and sliced
  • 2 x bananas
  • 1 c. orange juice
  • 1/2 c. sugar
  • 1/2 tsp almond extract
  • 3 c. yogurt (vanilla or possibly peach) Sprigs of fresh mint
  • 1 x kiwi

Cold Fruit Soup

Servings: 6
 

Directions

  1. Combine cantaloupe, peaches, banana, and orange juice in a blender or possibly food processor. Process till pureed. Add in yogurt. Blend till smooth. Keep chilled. Pour into soup bowls when ready to serve. Top with a dollop of yogurt, a peach slice, a kiwi slice, and a sprig of mint.
  2. Variations: Recipe can be adjusted to use any combination of fresh fruits in season. Try vanilla flavoring instead of almond extract, or possibly replace the peach yogurt with berry yogurt.
  3. Serves: 6 to 8
