Ingredients

  • Coconut Thai Curry
  • 1 onion, diced
  • 1/2 " piece fresh ginger, grated
  • 1 carrot, sliced into matchsticks
  • 1 tsp. coconut oil
  • few drops sesame oil
  • 1 clove garlic, minced
  • 1 small head cauliflower, cut into florets
  • 1/2 head broccoli, cut into florets
  • 1 red pepper, cut into matchsticks
  • 14 oz. can of light coconut milk
  • 1 1/2 T. Mountain Rose Herbs Thai Curry seasoning
  • 1/2 tsp. sea salt
  • small hand full fresh basil, chopped
  • cooked brown rice

I recently became an affiliate of Mountain Rose Herbs . I am very impressed with their business practices; they sell healthy organic products through fair trade policies and donate a portion of their profits to charities including the Organic Farming Research Foundation, and Farm Sanctuary which provides care for rescued animals. They use recycled and chemical free office supplies, they do not allow chemical cleaning agents in their facility (they clean like I do with healthy natural cleaning supplies like lemon oil, baking soda and vinegar!), and they ship in recycled boxes.

They generously sent me these products to review:

Oohlong Tea, Oregon Chai Tea, Thai Curry, and Himalayan Pink Salt. Everything looked wonderful and it was a tough choice, but I decided to try the Thai Curry first. I love that it comes in a glass jar and not plastic, since I try to avoid plastic for all food storage. It smelled insanely good when I opened the jar, so I knew I would have to come up with a great recipe for it.

I love simple recipes that do not have a mile long ingredient list. This time of year I especially like recipes that don't take long to prepare, since the holiday season can get pretty hectic. So I created this easy delicious vegan recipe using the Mountain Rose Herbs Thai Curry seasoning. If you have leftover brown rice, it's even faster.

  • Coconut Thai Curry
  • 1 onion, diced
  • 1/2 " piece fresh ginger, grated
  • 1 carrot, sliced into matchsticks
  • 1 tsp. coconut oil
  • few drops sesame oil
  • 1 clove garlic, minced
  • 1 small head cauliflower, cut into florets
  • 1/2 head broccoli, cut into florets
  • 1 red pepper, cut into matchsticks
  • 14 oz. can of light coconut milk
  • 1 1/2 T. Mountain Rose Herbs Thai Curry seasoning
  • 1/2 tsp. sea salt
  • small hand full fresh basil, chopped
  • cooked brown rice

Cook brown rice. When it's halfway done, begin veggies. In wok or large pot, cook ginger, onion and carrot in coconut and sesame oil till onion is nearly transparent. Add remaining veggies, stir fry for 3-4 min. Add coconut milk, Thai Curry seasoning, and sea salt and cook about 5 min. more till veggies are crisp-tender. Stir in basil, serve over brown rice.

This was a very satisfying meal and it made the kitchen smell wonderful!

That said, let me be perfectly frank. I will never recommend a product that I do not believe in and use myself.

During my 20 + years working as a hairdresser in a salon, I made almost no product commissions. Most hairdressers earn a fair amount from product sales, but I could not push products that I didn't believe in or use myself, and most salon products are both over-priced and full of unhealthy ingredients. So I did not sell or recommend most of them to my clients. It was more important to me to be able to sleep at night. It still is, so I will only recommend products that I believe in and use.
