Chorizo summer salad

This is my ultimate summer time movie munch:-) Its really just all my favourite summer flavours into a salad

Ingredients

  • Three Chorizo
  • One large or two small semi-ripe avacados
  • Fresh asparagus x 6
  • One block of creamy feta crumbled
  • olives
  • sundried tomatoes
  • sliced small red onion
  • Parsley
  • Balsamic vinegar
  • olive oil
  • s & p

Directions

  1. Chop asparagus and onion and fry gently in either 1T of butter or 2T of oil sprinkle with s&p till asparagus is cooled but still firm bed Chorizo cook till warmed and add to serving dish.
  2. Chop all other ingredients and add to dish. Shake a quarter cup of Balsamic with 3T olive oil and pour over salad.
  3. Add or subtract what you prefer. Done. Yum:):)
