Ingredients

  • 3 Cups All Purpose Flour
  • 3 Cups Granulated Sugar
  • 1/2 Cup Baking Cocoa Powder
  • 1 1/2 Tsp. Baking Powder
  • 1 1/2 Tsp. Baking Soda
  • 1 Tsp. Salt
  • 1/4 Tsp. Ground Cinnamon
  • 4 Large Eggs
  • 1 1/2 Cups Canola Oil
  • 2 Tbls. Butter, Melted and Cooled
  • 1 1/2 Tsp. Vanilla Extract
  • 1 1/2 Tsp. Almond Extract
  • 3 Cups Zucchini, Grated
  • 1 Cup Pecans, Toasted & Chopped
  • 1/2 Cup Mini Chocolate Chips
  • 1/2 Cup Dark Raisins, Plump If Needed (Optional)

Directions

  1. In a large bowl, combine the first seven ingredients. Whisk the eggs, oil, butter and extracts.
  2. Stir into dry ingredients just until moistened. Fold in zucchini, pecans, chocolate chips and raisins; if using. Pour into three greased and floured 8-in. x 4-in. loaf pans.
  3. Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from the pans to wire racks.
  4. Yield: 3 Loaves
