Chocolate Mayonnaise Cake

Ingredients

  • 1 pkg. devil's food cake mix
  • 1 sm. pkg. chocolate instant pudding
  • 1 c. mayonnaise
  • 1 c. water
  • 3 large eggs
  • 6 T butter
  • 1/2 c. Hershey's cocoa
  • 2 2/3 c. confectioners' sugar
  • 1/3 c. lowfat milk
  • 1 teaspoon vanilla

Directions

  1. Spray 2 (9") layer cake pans with cooking spray. In large bowl with mixer at low speed, blend all ingredients for 30 seconds. Beat at medium speed for 2 min. Pour into prepared pans and bake in 350 degree oven for 20 to 30 min or possibly till cake springs back when lightly touched in center. Cool in pans 10 min. Remove and cool on wire racks. Frost.
  2. Cream butter in small mixer bowl, add in cocoa and confectioners' sugar alternately with lowfat milk. Beat to spreading consistency. Blend in vanilla.
