Chocolate Cheesecake

Ingredients

  • 4 8oz. packages cream cheese at room temperature
  • 1/3 cup cocoa powder
  • 1 cup granulated sugar
  • 1 tablespoon vanilla
  • 3 large eggs
  • ½ teaspoon salt
  • For the crust:
  • 2 cups crushed graham cracker crumbs
  • 1/3 cup sugar
  • 1/3 cup softened butter
  • ½ teaspoon salt

Chocolate Cheesecake

Time: 1 hour minutes prep, 50 minutes cook
Servings: 12
 

Directions

  1. Place the graham crackers in a food processor with the sugar, salt and soft butter- mix until all of the ingredients are incorporated.
  2. Put the graham cracker crumb mixture in a spring-form, or 9-inch cake pan and work the crust mixture to the edges.
  3. For the filling:
  4. Place the cream cheese, cocoa powder, sugar, vanilla, eggs and salt in a mixing bowl and blend for 3 minutes, or until the batter is smooth.
  5. Place the batter in the pan over the graham cracker crust and bake at 350 degrees for 1 hour, or until an inserted toothpick comes out clean.
  6. Refrigerate for three hours before cutting.
