Ingredients

  • 125 pounds Boneless chicken thigh
  • 3/4 gal olive oil
  • 50 pounds onion chopped
  • 40lbs green peppers, large dice
  • 3cs large hot cherry peppers(jar)
  • 6 pounds sliced garlic
  • 10 gals white wine
  • 30 gals chicken stock
  • 4 gals chopped parsley

Time: 1 hours prep, 1.5 hours cook
Servings: 400
 

Directions

  1. Season thighs w/ salt and pepper.
  2. Brown chix thighs off in batches in hot pan.
  3. Meanwhile heat oil in large pan add onions peppers and reduce heat cook til softened.
  4. Add garlic and cook til golden.
  5. Add wine and chix stock and increase heat to boil.
  6. Reduce liquid by 2/3 and add chix and parsley.
  7. Adjust seasoning.
