Chicken With Apples

Ingredients

  • 6 x Chicken breasts, boned and skinned
  • 1 1/2 c. Finely diced apples
  • 1/4 c. Golden brown raisins
  • 1/4 c. Walnuts
  • 3 Tbsp. Chopped onion
  • 1/2 tsp Sage
  • 1/4 c. Orange juice, from frzn concentrate
  • 1/4 c. Butter
  • 1/3 c. Apple jelly
  • 1/4 c. Dry sherry

Chicken With Apples

Directions

  1. Lb. breasts to 1/4 inch. Mix together apples, raisins, walnuts, onion and sage. Put equal portions of stuffing on each breast and roll, securing with toothpicks if necessary. Place breasts in oven-proof baking dish.
  2. In small saucepan, combine ingredients for glaze. Cook over low heat till blended. Pour glaze over breasts. Bake uncovered at 350 for 45 min.
  3. Brush with glaze frequently.
