Chicken Chow Mein

Ingredients

  • 9oz medium egg noodles
  • 2 tbsp oil
  • 1 tbsp sesame oil
  • 2 garlic cloves,peeled and finely chopped
  • 4 chicken breasts,cut into thin strips
  • 1 large red pepper,thinly sliced
  • 8 spring onions,trimmed and thinly sliced
  • 4oz canned sweetcorn
  • 3 tbsp soy sauce

Chicken Chow Mein

Time: 20 minutes prep, 20 minutes cook
Servings: 4
 

Directions

  1. Bring a large pan of water to the boil,add the noodles,cook for 4 minutes,then drain well and rinse under cold water.Set aside.
  2. Heat both oils in a large saucepan or wok.Add the garlic and stir-fry for about 30 seconds.Add the chicken and stir fry over medium-high heat for about 5 minutes or until just cooked.
  3. Remove from the pan with a slotted spoon and set aside on a plate.
  4. Add the pepper to the pan and stir fry for 4 mins,then add the sweetcorn and stir fry for 1 min.Add the spring onions and stir fry for 1 min,then add the chicken and noodles to the pan.
  5. Add the soy sauce and heat through,tossing to mix for 2 mins.Serve straight away.
