Ingredients

  • 1/3 c. Olive or possibly vegetable oil
  • 2 Tbsp. Lime juice
  • 2 Tbsp. Minced fresh cilantro or possibly parsley
  • 1 1/2 tsp Sugar
  • 1 x Clove garlic, chopped
  • 1/2 tsp Chili pwdr
  • 1/2 tsp Salt, optional
  • 1/4 tsp Pepper
  • 1 can (15 ounce.) black beans, rinsed and liquid removed
  • 1 can (11 ounce.) Mexicorn, liquid removed
  • 1 med Sweet red pepper, julienned
  • 1/3 c. Sliced green onions
  • 6 c. Torn romaine
  • 1 1/2 c. Cooked chicken strips Additional cilantro or possibly parsley, optional

Directions

  1. In a jar with tight-fitting lid, combine the first eight ingredients; shake well and set aside. In a bowl, toss beans, corn, red pepper and onions; set aside. Arrange romaine on individual plates; top with bean mix and chicken. Drizzle with dressing; garnish with cilantro if you like.
