Chicken Adobo With Coconut Milk

Ingredients

  • 11\2 kg. chicken or pork, sliced to serving portions
  • 5 cloves garlic, minced
  • 1medium size onion, minced
  • 1 piece chicken or pork broth cube or granules
  • 1\2 cup vinegar(distilled white is fine)
  • 2 bay leaves
  • 21\2 cups coconut milk
  • 2 cups peeled and sliced green papaya(optional)available in all asian market.
  • salt and pepper to taste

Chicken Adobo With Coconut Milk

 
 

Directions

  1. Combine first six ingredients in a bowl; let stand for an hour in refrigerator.
  2. Transfer mixture into a pan and simmer until almost tender.
  3. Pour in coconut milk and sliced papaya.
  4. Simmer until papaya is crisp-tender
  5. Adjust seasonings.

This is a different twist of traditional chicken or pork adobo. Use chicken broth cube\ granules for chicken and pork broth cube\granules for pork.

                  Yes this is a good one. It is adobo with a twist because of the coconut milk. I have tried this several times with a little spice however. My family love this too.
