Ingredients

  • 1 slice whole wheat bread
  • 1 tbsp shredded 2% Cheddar cheese
  • 1 egg
  • 1/4 tsp ground black pepper
  • 1 tbsp chopped fresh chives

Directions

  1. Heat a heavy nonstick skillet over medium heat. Meanwhile, cut a hole in the center of bread slice, using 1-1/2-inch round cookie cutter or use the top of a drinking glass. Discard removed bread circle or reserve for another use.
  2. Place the bread in the skillet. Break egg into hole; sprinkle with the pepper. Cook over medium heat 2 minutes; turn bread and egg with spatula.
  3. Top with cheese; cover. Cook 2 minutes or until egg white is set and yolk is cooked to desired doneness. Sprinkle with chives.
