Cheesy Scalloped Potatoes

Ingredients

  • 1/4 c. Minced onion
  • 2 Tbsp. Butter
  • 2 Tbsp. Flour
  • 1 1/4 c. Lowfat milk
  • 1 c. Grated cheddar cheese Salt to taste Freshly-grnd black pepper to taste
  • 3 x Potatoes peeled, and thinly sliced, not rinsed

Directions

  1. Preheat oven to 350 degrees.
  2. Cook onion in butter till soft, add in flour and cook for 2 min, whisking. Whisk in lowfat milk and cook till thick and bubbly. Remove from heat and add in 3/4 c. of cheese, stirring till melted; season with salt and pepper.
  3. Layer half of potatoes in a baking dish and sprinkle with salt and pepper. Cover with half of sauce. Layer remaining potato slices on top of sauce and season. Top with remaining sauce and sprinkle with remaining cheese. Bake, covered, for 30 min or possibly till potatoes are tender.
  4. This recipe yields 4 servings.
