Central European Chicken Paprikash

Ingredients

  • 1 Tbsp. Canola oil
  • 1 lrg Onion, minced
  • 2 x Cloves garlic, finely minced
  • 1 lb Boneless & skinless chicken, cubed
  • 1 1/2 Tbsp. Paprika
  • 1 x 15 ounce. can minced tomatoes
  • 1 c. Water
  • 1 Tbsp. Red wine vinegar
  • 1 tsp Sugar
  • 1/2 c. Lowfat sour cream
  • 1/4 c. Parsley, finely minced Salt to taste

Directions

  1. In a 3-quart. pot, over low heat, heat oil. Saute/fry onion about 5 min till onion is translucent/soft; add in garlic. Increase heat and add in chicken; cook about 5 min, stirring, till outside looks cooked. Add in paprika, tomatoes, 1 c. water, vinegar and sugar. Stir, turn down heat slightly; cover and simmer abut 20 min. Let cold slightly and stir in lowfat sour cream, parsley and salt to taste. Serve over Poppy Seed Noodles and Horseradish, Dill & Walnut Spinach.
