Ingredients
- 2 c. sugar
- 4 large eggs
- 1 1/4 c. salad oil
- 1 teaspoon vanilla
- 2 c. self-rising flour
- 2 teaspoon baking soda
- 2 teaspoon cinnamon
- 3 c. grated carrots
- 1 stick butter
- 1 (8 ounce) cream cheese
- 1 box powdered sugar
- 1 teaspoon vanilla
- 1 c. minced pecans

Carrot Cake With Cream Cheese Icing

Directions
- Blend sugar, large eggs, salad oil and vanilla together. Sift all dry ingredients together and add in. Stir in grated carrots. Pour in three 8 inch pans, greased and lightly floured. Bake at 350 degrees for 30 to 35 min.
- Mix together and spread on cake.
