Carrot Cake With Cream Cheese Icing

Ingredients

  • 2 c. sugar
  • 4 large eggs
  • 1 1/4 c. salad oil
  • 1 teaspoon vanilla
  • 2 c. self-rising flour
  • 2 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 3 c. grated carrots
  • 1 stick butter
  • 1 (8 ounce) cream cheese
  • 1 box powdered sugar
  • 1 teaspoon vanilla
  • 1 c. minced pecans

Carrot Cake With Cream Cheese Icing

Servings: 12
 

Directions

  1. Blend sugar, large eggs, salad oil and vanilla together. Sift all dry ingredients together and add in. Stir in grated carrots. Pour in three 8 inch pans, greased and lightly floured. Bake at 350 degrees for 30 to 35 min.
  2. Mix together and spread on cake.
