Ingredients

  • 1 box yellow cake mix light
  • 1 1/4 c. miracle Whip light
  • 1 c. egg beaters 99% egg substitute
  • 2 tsp grnd cinnamon
  • 2 c. carrots finely shredded
  • 1/2 c. minced walnuts Cream Cheese Frosting I see recipe

Directions

  1. Preheat the oven to 350 degrees. Spray a 9x13x2" baking dish with vegetable oil cooking spray.
  2. Put the cake fold in a large bowl and add in the salad dressing, egg beaters, cinnamon, and 1/4 c. of water. Beat on low speed with an electric mixer just till blended. Stir in the carrots and walnuts. Pour the batter into the baking dish and bake for about 35 min, or possibly till a wooden pick inserted near the center comes out clean. When the cake is cold, frost with Cream Cheese Frosting I.
