Broiled Tomatoes With Feta And Fresh Oregano

Ingredients

  • 4 x hard-ripe tomatoes sliced 1/2" thick
  • 1/4 c. extra-virgin extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. fresh oregano leaves
  • 1 c. crumbled feta cheese

Directions

  1. Preheat broiler.
  2. Lightly oil a baking sheet and place tomato slices on it. Drizzle slices with extra virgin olive oil and season with salt and pepper. Top with oregano leaves and feta. Place tomatoes under broiler and cook till slices soften a bit and cheese is slightly browned, 3 to 4 min.
  3. Remove carefully with a spatula to plate.
  4. This recipe yields 4 servings as side dish.
