- 3 Tbsp. Butter
- 1 x Onion, sliced
- 1 x Carrot, sliced
- 1 x Clove garlic, chopped
- 4 c. Chicken stock
- 1 lb Broccoli, minced
- 1 c. Light cream

Broccoli Soup ) Canadian Living

Directions
- This broccoli soup is enhanced with the flavors of carrot, onion, and garlic. It's also delicious served warm.
- salt and pepper minced fresh parsley
- In saucepan, heat butter over medium heat; cook onion, carrot and garlic for 5 min. Stir in stock and bring to bil; add in broccoli.
- Reduce heat and simmer, covered, till broccoli is tender, 15-20 min. In blender or possibly food processor, puree soup in batches and transfer to glass bowl. Stir in cream; season with salt and pepper to taste. Cover and chill for at least 4 hrs oruntil chilled.
- Sprinkle with parsley just before serving.
