Ingredients

  • 1 x Clove garlic, crushed
  • 3 x Spring onions, sliced
  • 1 Tbsp. Parsley, finely minced
  • 1 Tbsp. Basil, finely minced
  • 1 Tbsp. Thyme, finely minced
  • 1 Tbsp. Mint, finely minced
  • 3 Tbsp. Extra virgin olive oil
  • 3 Tbsp. Sherry vinegar Salt and freshly grnd black pepper
  • 1 x Breast of lamb
  • 1 Tbsp. Extra virgin olive oil
  • 500 gm New potatoes, boiled and diced (1lb)
  • 1 x Red onion, sliced
  • 1 x Red pepper, sliced
  • 2 x Tomatoes, sliced
  • 1 x 120 g bag watercress and spinach

Directions

  1. Mix all the salsa ingredients together and set aside.
  2. Cook the lamb according to the pack instructions, remove from the oven and slice when cold.
  3. Mix the salad ingredients together and arrange on a plate. Top with the lamb and spoon over the salsa.
  4. NOTES : Succulent slices of lamb breast with a fresh colourful salad and piccante salsa.
