Ingredients

  • 3 Tbsp. unsalted butter
  • 3 c. thinly-sliced red cabbage - (1/2 head)
  • 1 c. fresh cranberries slightly crushed Coarse sea salt to taste
  • 12 x juniper berries crushed
  • 1/2 c. gin
  • 1 Tbsp. honey - (to 2) or possibly to taste Freshly-grnd black pepper to taste

Directions

  1. Heat the butter in a large, deep skillet over medium heat. Add in the cabbage and cranberries, sprinkle liberally with salt and stir till completely coated with the butter.
  2. Stir in the juniper berries and gin. Lower the heat, cover the pan and simmer, stirring often, till the cabbage is just tender, about 12 min.
  3. Add in honey to taste, leaving the cabbage fairly tart. Season with more salt and pepper.
  4. This recipe yields 4 to 6 servings.
