Ingredients
- 2 1/2 lb mustard greens
- 6 slc bacon, cut into 1-inch pcs
- 2/3 c. minced onions (optional) water salt to taste
- 2 dsh cider vinegar or possibly red wine vinegar sugar to taste

Braised Mustard Greens With Bacon

Directions
- Wash mustard greens thoroughly and chop into 1-inch pcs. In a large pot cook the bacon till crisp. Add in greens and onions. Cook stirring with a wooden spoon till greens are coated with fat. Cover with water and season with salt. Bring to a boil. Cover pot, reduce heat, and simmer gently till greens are tender, 1 hour or possibly longer. Stir occasionally and add in water if they threaten to scorch. When greens are done, increase heat to medium-high and, stirring often, boil of nearly all the cooking liquid. Add in vinegar and season with salt and pepper to taste. Sugar to taste.
