Boontjie Sop (Bean Soup)

We call this STEWP as it should be nice and thick so your spoon can stand up in it .
Wonderful on a cold night.
It is a traditional South African soup from our Dutch heritage

Ingredients

  • 500 GMS sugar beans
  • 500 gms beef shin
  • 2 tomatoes peeled and chopped
  • 2 med onions chopped
  • 2 carrots grated
  • 3 litre water
  • salt and pepper

Directions

  1. Soak beans overnight in cold water
  2. Place all ingredients in a large pot and bring to the boil,
  3. simmer for 4 hours, or until the beans are soft and the meat shreds off the bone,
  4. add more water if necessary not too much as you want the soup thick,
  5. Let it stand for a day before eating
  6. Freezes well
  7. serve with baked sweet potatoes.
