Ingredients

  • 1 (16 ounce.) can black beans, rinsed & liquid removed
  • 4 ounce. Jack cheese, cubed 1/4"
  • 1 (8 ounce.) can whole kernel corn, liquid removed
  • 3/4 c. sliced green onions
  • 3/4 c. thinly sliced celery
  • 1 sm. red pepper, diced
  • 3/4 c. picante sauce
  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. lemon juice
  • 1 teaspoon cumin
  • 1 clove garlic, chopped

Directions

  1. Combine beans, cheese, corn, onions, celery and red pepper in large bowl.
  2. Combine picante sauce, oil, lemon juice, cumin and garlic.
  3. Toss with bean mix; chill. Serve with additional picante sauce, if you like. Serves 8-10.
