Ingredients
- 1 (16 ounce.) can black beans, rinsed & liquid removed
- 4 ounce. Jack cheese, cubed 1/4"
- 1 (8 ounce.) can whole kernel corn, liquid removed
- 3/4 c. sliced green onions
- 3/4 c. thinly sliced celery
- 1 sm. red pepper, diced
- 3/4 c. picante sauce
- 2 tbsp. extra virgin olive oil
- 2 tbsp. lemon juice
- 1 teaspoon cumin
- 1 clove garlic, chopped

Black Bean & Corn Salad
Servings: 8
Directions
- Combine beans, cheese, corn, onions, celery and red pepper in large bowl.
- Combine picante sauce, oil, lemon juice, cumin and garlic.
- Toss with bean mix; chill. Serve with additional picante sauce, if you like. Serves 8-10.
