Ingredients

  • 1 pound ground bison
  • 1/2 cup chopped onion
  • 1 can (16 ounces) chili with beans
  • 2 teaspoons chili powder
  • 1 can condensed cream of chicken soup
  • 1 (20 ounce) can (2 1/2 cups) yellow hominy, drained
  • 2 tablespoons sliced cholla buds
  • 1/2 cup shredded process cheese, or Velveeta

Directions

  1. Cook ground bison and onion till meat is browned. Stir in remaining ingredients, except the cheese. Spoon bison and hominy mixture into 2-quart casserole. Cover; bake at 350° for 25 minutes. Sprinkle cheese over top; continue baking, uncovered, for 5 to 10 minutes longer. Hominy recipe makes about 6 servings. Serve with hot fresh fry bread.
