Beetroot Salad With Ginger Syrup

Ingredients

  • 500 gm beetroot, baby
  • 1/2 c. white vinegar
  • 1/2 c. sugar (caster)
  • 1 Tbsp. ginger, crushed
  • 1/4 c. lemon juice
  • 1/4 c. orange juice
  • 2 x spring onions

Beetroot Salad With Ginger Syrup

Servings: 4
 

Directions

  1. Drain beetroot.
  2. Combine vinegar, sugar, ginger and juices in a pan and bring to the boil.
  3. Add in beetroot and simmer gently for 5 min. Remove from heat and allow to cold.
  4. Serve cool sprinkled with minced spring onions.
  5. Great for BBQ
