Ingredients
- 500 gm beetroot, baby
- 1/2 c. white vinegar
- 1/2 c. sugar (caster)
- 1 Tbsp. ginger, crushed
- 1/4 c. lemon juice
- 1/4 c. orange juice
- 2 x spring onions

Beetroot Salad With Ginger Syrup
Servings: 4
Directions
- Drain beetroot.
- Combine vinegar, sugar, ginger and juices in a pan and bring to the boil.
- Add in beetroot and simmer gently for 5 min. Remove from heat and allow to cold.
- Serve cool sprinkled with minced spring onions.
- Great for BBQ
