Bean Sprout Omelette

Mini omelets made with eggs, bean sprouts, salad leaves, onions and red chillies.

Ingredients

  • 1 cup bean sprouts - break the tail part, rinsed and drained.
  • 1 cup salad leaves - shredded
  • 3 eggs
  • 1 red (abt 100g) onion - sliced thinly
  • 2 red chillies - sliced thinly
  • Pepper and salt for taste
  • Oil as needed

Directions

  1. Combine and mix all ingredients (except oil) in a bowl.
  2. Heat oil on a flat flying pan.
  3. Scoop a bit of the egg mixture and pour into the pan.
  4. Fry while flattening it, to spread evenly to cook on both sides.
  5. Remove from pan.
  6. Repeat the same process with the balance of the egg mixture.
