Ingredients

  • 6 x Lamb tenderloins
  • 1/2 c. New Mexico Style Barbecue Sauce see * Note Salt to taste Freshly grnd black pepper to taste
  • 4 c. Mixed greens
  • 8 slc Goat cheese (1/4" thick slices)
  • 8 x Pencil thin asparagus spears grilled
  • 1 x Red bell pepper grilled, seeded, and cut in 4 pcs
  • 1 x Yellow bell pepper grilled, seeded, and cut in 4 pcs
  • 2 x New potatoes cooked, grilled, and sliced 1/4" thick

Directions

  1. Prepare a wood or possibly charcoal fire and let it burn down to embers.
  2. Brush the lamb with the barbecue sauce and season to taste with salt and pepper. Grill for 3 min on each side or possibly till done.
  3. Serve on top of mixed greens with grilled vegetables and goat cheese.
  4. This recipe yields 4 servings.
