Barbecued Emu, Ostrich Or Kangaroo Fillet

Ingredients

  • 1 kg Fillet steaks
  • 1 c. Red wine
  • 2 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Balsamic vinegar
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. Tomato paste
  • 1 cl Garlic, crushed
  • 2 tsp Soft brown sugar

Barbecued Emu, Ostrich Or Kangaroo Fillet

Servings: 1
 

Directions

  1. Combine wine, oil, vinegar, tomato paste, mustard, garlic and sugar in bowl, combine well.
  2. Place in dish with meat to marinate for 2 hrs, turning occasionally.
  3. Drain meat. Reserve the marinade.
  4. Cook on barbecue till just browned, brushing with marinade.
