Banana Bread

Ingredients

  • 1 1/4 cup whole wheat flour
  • 3/4 cup white flour or whole wheat pastry flour
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 2 cups mashed bananas (3 big)
  • 1/2 cup sugar
  • 1/2 cup soy milk
  • 1/4 cup oil
  • 1 TB vanilla
  • 1/2 cup chopped walnuts

Banana Bread

Time: 20 minutes prep, 55 minutes cook
Servings: 1 loaf
 

Directions

  1. Preheat oven to 350˚. Mix wet and dry ingredients separately. Sift the dry ingredients slowly into the wet. Add extra liquid if needed to make a stiff but storable batter.
  2. Lightly oil and flour loaf pan and bake 55-65 minutes until pick comes out clean.
  3. May be frozen.
