Baked Dijon Fish

Ingredients

  • 1-1/2 lbs firm white fish fillets, such as cod, pollock, flounder or sole
  • Juice of 1 lemon
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp dried dill weed
  • 1/2 tsp ground black pepper
  • 1/4 tsp garlic powder
  • 1 carrot, peeled, shredded
  • 3 tbsp grated Parmesan cheese

Baked Dijon Fish

Time: 15 minutes prep, 12 minutes cook
Servings: 6
 

Directions

  1. Preheat oven to 350° F. Rinse fish and pat dry. Set aside.
  2. Mix the lemon juice, mustard, olive oil, dill, pepper and garlic powder together in a small bowl. Brush dressing on both sides of fish fillets.
  3. Arrange fish, overlapping thinnest portions, in a 13" x 9" baking dish. Drizzle remaining dressing over fish. Arrange shredded carrot over fish. Sprinkle with the cheese.
  4. Bake about 12 minutes or until fish flakes easily with fork.

    Thanks to RecipeKing for posting this awesome recipe! Very easy and super delicious. I used cod which is one of my favorite fish. This meal is very easy and my whole family enjoyed it. The only thing I left off was the shredded carrots because I'm not a fan of carrots. I am not a great cook and on the days when my wife is at work and I need to make a great dinner for when she gets home, this one is definitely a winner. My two kids give it a thumbs up too. And I'm happy knowing that it is a pretty healthy recipie and packed with lots of muscle building protein. Give it a try!
