Ingredients
- 1/2 lb Fresh arugula leaves, washed and dry
- 4 x Roma tomatoes, sliced
- 1/2 c. Red onion, sliced
- 1/4 c. Fresh minced parsley
- 2 tsp Red wine vinegar
- 1/4 c. Red onion Salt & pepper

Arugula, Tomato And Red Onion Salad
Servings: 1
Directions
- Remove the stems from the arugula and place the leaves in a salad bowl. Fold in the tomatoes, onion and parsley. Place the vinegar in a separate bowl and slowly whisk in the oil. Season with salt and pepper. Pour the dressing over the salad and toss to blend well.
- Serves 4.
