Apple Pie Parfaits

Ingredients

  • 1 Apple - cored, peeled and thinly sliced (I used a Gala apple)
  • 1/2 cup Apple Cider
  • 1 Cinnamon Stick
  • 1/4 Tbsp Nutmeg
  • 6 oz Vanilla Yogurt
  • 4 Tbsp Chopped Walnuts

Apple Pie Parfaits

Time: 10 minutes prep, 20 minutes cook
Servings: 2
 

Directions

  1. Place apples, cider, cinnamon stick and nutmeg in a medium saucepan. Bring to a boil. Reduce heat and simmer until apples are soft and liquid starts to thicken. (about 20 minutes) Remove cinnamon stick and discard.
  2. Place 1/4 of the yogurt, 1/4 of the apple and syrup, and 1/4 of the walnuts into each serving glass. Repeat layers. Serve while apples are still warm or refrigerate before serving.
