Apple Cake

I love this recipe, loaded with apples, tasty and healthy!

Ingredients

  • ¾ cup brown sugar
  • ½ cup sunflower oil
  • 1 tsp. Vanilla
  • 1 egg
  • 1 egg white
  • ¾ cup white flour
  • 1 cup whole wheat flour
  • ½ tsp. Salt
  • 1 tsp. Baking soda
  • 1 ½ tsp. Cinnamon
  • ¼ tsp grated nutmeg
  • 4 cups Delicious apples, peeled and cut into small chunks
  • ½ cup chopped walnuts or pecans

Directions

  1. Oven: 350
  2. Pan: 8-inch springform pan (buttered and floured) (I use a square baking pan and just lightly oil it)
  3. Beat together brown sugar and oil. Add vanilla, egg and egg white and beat until smooth. Add flours, salt, baking soda, cinnamon, and nutmeg and beat until smooth. Mix in apples and walnuts. The batter will be very sticky and stiff. Spoon batter into pan and bake for 50-60 minutes or until a cake tester comes out clean.
  4. Other additions: I also sprinkle walnuts and brown sugar on top of the batter before putting in the oven.
