Ann's Carrot Cake

Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 c. sugar
  • 1 tsp baking soda
  • 1 tsp baking pwdr
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2/3 c. vegetable oil
  • 2 x Large eggs
  • 1 c. grated carrots
  • 8 ounce crushed pineapple in juice liquid removed
  • 1 tsp vanilla extract
  • 2 Tbsp. margarine -- softened
  • 3 ounce cream cheese -- softened
  • 1 tsp vanilla extract
  • 1 lb powdered sugar
  • 1/2 c. pecans -- minced

Ann's Carrot Cake

Directions

  1. Cake: Mix dry ingredients, then add in the remaining ingredients. Bake in a greased floured 9x13" pan at 350 F for 35 min.
  2. Frosting: Whip margarine, cream cheese and vanilla together; blend in powdered sugar. Stir in pecan pcs.
