Alvin's Zucchini Nut Muffins

Ingredients

3 x Large eggs
1 c. corn oil
1 Tbsp. vanilla
2 c. zucchini, unpeeled and shredded
2 c. sugar
2 c. flour, unsifted

1 Tbsp. cinnamon
1 1/2 tsp baking soda
1 1/2 tsp salt
1/4 tsp baking pwdr
1 c. nuts, minced

Directions

Preheat oven to 400 degrees. Combine Large eggs, oil, vanilla, and zucchini. Add in remaining ingredients and stir till moistened. Grease muffin tins and fill 2/3 full. Bake for 18 min.
