Alvin's Zucchini Nut Muffins Recipe

Ingredients
- 3 x Large eggs
- 1 c. corn oil
- 1 Tbsp. vanilla
- 2 c. zucchini, unpeeled and shredded
- 2 c. sugar
- 2 c. flour, unsifted
- 1 Tbsp. cinnamon
- 1 1/2 tsp baking soda
- 1 1/2 tsp salt
- 1/4 tsp baking pwdr
- 1 c. nuts, minced
Directions
- Preheat oven to 400 degrees. Combine Large eggs, oil, vanilla, and zucchini. Add in remaining ingredients and stir till moistened. Grease muffin tins and fill 2/3 full. Bake for 18 min.
