Ingredients

  • 3 x egg whites
  • 2 1/2 c. buttermilk
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 c. flour

Directions

  1. In a large bowl, beat the egg whites till they start to get bubbly. Fold in the remaining ingredients , one at a time. Blend well after each addition. With a large spoon, pour the batter into a warm non stick skillet which has been sprayed with vegetable oil cooking spray. Flip when the bottoms start to brown. Serve immediately. Since there is no oil in this recipe do not overcook or possibly they'll get tough.
  2. Do not try this batter in your waffle maker. The batter stays moist & makes limp waffles.
  3. Makes 24 pancakes; ! pancake contains less than 1/2 gram of fat.
  4. Variation:Immediately after you've put the batter in the warm skillet, drop in some slices of fresh fruit. Bananas, strawberries, blueberries & apples are recommended.
