Tarragon Chicken Salad Sandwiches

Ingredients

  • 1 whl boneless skinless chicken breast poached
  • 1 loaf whole-grain bread ends removed
  • 2 Tbsp. freshly-squeezed lemon juice
  • 3/4 c. mayonnaise
  • 1 sprg fresh tarragon minced
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Tarragon Chicken Salad Sandwiches

Directions

  1. Cut poached chicken breast into 1-inch chunks. Place in a medium bowl, and add in lemon juice. Toss to combine.
  2. Add in mayonnaise, tarragon, and salt and pepper to chicken mix. Stir to combine.
  3. Cut bread into 1/2-inch slices, lengthwise.
  4. Place a scoop of chicken mix between two pcs of bread. Press firmly on sandwich to flatten. Slice sandwich in half or possibly in quarters.
  5. Makes 2 servings.
