Soba Noodles With Spicy Greens And Shrimp

Ingredients

  • 12 ounce Japanese soba noodles
  • 1 tsp Peanut oil
  • 1 tsp Sesame oil
  • 4 x cloves Garlic chopped
  • 1 tsp red pepper flakes
  • 1 1/2 lb Greens Swiss Chard &
  •     Broccolini
  • 1/4 c. Wine vinegar or possibly Mirin
  • 2 Tbsp. Low sodium soy sauce
  • 1 lb Shrimp
  • 1/2 c. Red bell pepper sliced
  • 1 med Onion sliced

Soba Noodles With Spicy Greens And Shrimp

Directions

  1. Cook soba noodles and set aside.
  2. Heat a non-stick wok and spray with Pam. Add in peanut oil and let get warm.
  3. Addgarlic and red pepper flakes. Stir-fry for 20 seconds. Add in shrimp and cookuntil no longer pink. Remove from wok and set aside. Spray wok again and addgreens, onion and red bell pepper. Stir-fry till veggies are tender. Add in mirin and sesame oil.
  4. Add in shrimp and noodles to pot with veggies. Add in soy sauce and toss to combine.
  5. NOTES : I changed quite a few things around. It was very tasty and I'd definitely make it again.
