%3C/p%3E%3Cp%3EYou%20still%20have%20to%20use%20lime%20zest%20from%20a%20Persian%20Lime,%20but%20it's%20OK,%20it's%20all%20good.%20If%20you%20really%20want%20a%20treat,%20get%20yourself%20a%20Makrut%20(kaffir)%20lime%20and%20use%20the%20zest%20from%20that%20for%20an%20exotic%20spin%20on%20the%20Key%20Lime%20pie.%20(do%20not%20attempt%20to%20use%20the%20juice%20from%20a%20Kaffir%20Lime%20though,%20there%20isn't%20much%20and%20it's%20not%20all%20that%20tasty)%3C/p%3E%3Cp%3ESince%20it's%20my%20mother's%20pie,%20I%20decided%20to%20go%20ahead%20and%20use%20one%20of%20my%20Corningware%20Pie%20plate%20(P-309)%20simply%20because%20I%20like%20the%20clean%20white%20look%20of%20the%20pie%20plate.%3C/p%3E%3Cp%3EIt%20just%20looks%20more%20classy%20to%20me%20than%20the%20normal%20clear%20glass%20pie%20dishes%20and%20I%20refuse%20to%20use%20metal%20pie%20plates.%20%20Granted,%20I%20was%20raised%20on%20glass%20pie%20plates,%20cause%20mom%20and%20grandma%20wanted%20to%20SEE%20the%20bottom%20crust%20to%20make%20sure%20is%20was%20brown%20enough%20before%20removing%20the%20pie%20from%20the%20oven.%20%20Key%20Lime%20pie,%20though,%20is%20usually%20entails%20a%20cookie%20crust,%20so%20this%20becomes%20a%20non-issue%20for%20the%20opacity%20of%20a%20Corningware%20Pie%20plate.%20%20:-)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400F%20degrees.%3C/p%3E%3Cp%3EPlace%20the%20Vanilla%20Wafers%20in%20a%20Zip-lock%20Bag,%20and%20crush%20with%20a%20rolling%20pin,%20then%20move%20to%20a%20bowl.%3C/p%3E%3Cp%3EYou%20can%20use%20a%20food%20processor%20for%20this,%20but%20I%20like%20to%20leave%20mine%20fairly%20coarse,%20cause%20I%20like%20a%20little%20crunch%20in%20my%20crust.%3C/p%3E%3Cp%3EAdd%20Sugar,%20Salt%20and%20Lime%20Zest.%3C/p%3E%3Cp%3EMix%20with%20a%20fork%20to%20incorporate%20it%20well.%3C/p%3E%3Cp%3EDrizzle%20with%20melted%20Butter%20and%20stir%20with%20a%20fork%20to%20coat%20the%20crumbs....%3C/p%3E%3Cp%3EWhen%20the%20mixture%20will%20clump%20when%20squeezed,%20you%20have%20mixed%20enough.%3C/p%3E%3Cp%3EPour%20the%20crumb%20mixture%20into%20the%20Corningware%20Pie%20Plate%20(P-309)%3C/p%3E%3Cp%3EPress%20the%20crumb%20mixture%20down%20over%20the%20bottom%20and%20up%20the%20sides%20of%20the%20plate.%20(you%20can%20use%20a%20glass%20if%20you%20choose)%3C/p%3E%3Cp%3EToss%20the%20Pie%20Plate%20(P-309)%20into%20the%20oven%20and%20bake%20for%2010%20minutes%20(Just%20until%20the%20edges%20begin%20to%20brown).%3C/p%3E%3Cp%3EWhen%20you%20remove%20the%20crust%20from%20the%20oven,%20reduce%20the%20oven%20temperature%20to%20350F%20degrees.Place%20the%20Egg%20Yolks%20in%20the%20clean%20bowl.%3C/p%3E%3Cp%3EWhisk%20until%20pale.%3C/p%3E%3Cp%3EAdd%20Lime%20Zest%20and%20whisk%20again.%3C/p%3E%3Cp%3ESlowly%20add%20the%20Sweetened%20Condense%20Milk,%20whisking%20constantly,%20then%20continue%20whisking%20for%20about%203%20minutes%20to%20ensure%20everything%20is%20well%20combined.%3C/p%3E%3Cp%3EAgain,%20whisking%20constantly,%20slowly%20drizzle%20in%20the%20Key%20Lime%20juice.%3C/p%3E%3Cp%3EContinue%20whisking%20until%20everything%20is%20combined,%20then%20stop%20(the%20acidity%20of%20the%20Key%20Lime%20juice%20will%20begin%20to%20%22set%22%20the%20Egg%20Yolks)%20and%20immediately%20pour%20the%20filling%20into%20the%20warm%20cookie%20crust.%3C/p%3E%3Cp%3ESmooth%20the%20top%20slightly%20with%20a%20spatula.%3C/p%3E%3Cp%3EPlace%20in%20the%20oven%20for%2010%20minutes%20to%20ensure%20the%20Egg%20Yolks%20are%20cooked.%3C/p%3E%3Cp%3E(It%20doesn't%20take%20long,%20between%20the%20acid%20in%20the%20Lime%20Juice%20and%20the%20Heat%20from%20the%20oven,%20the%20Egg%20Yolks%20will%20be%20completely%20%22cooked%22)%3C/p%3E%3Cp%3ERemove%20the%20pie%20from%20the%20oven%20and%20cool%20to%20room%20temperature%20before%20chilling%20for%20at%20least%202%20hours%20(you%20can%20freeze%20the%20pie%20if%20you%20like)%3C/p%3E%3Cp%3ECut%20a%20big%20slice%20and%20sing%20Happy%20Birthday%20to%20your%20Mamma!%3C/p%3E%3Cp%3EWhere%20is%20your%20Corningware??%3C/p%3E){kind=link}
