Similkameen Peach Cobbler With Bee Pollen And Stevia Crust, With Sea Cucumber Garnish

Ingredients

  • 1 c. all purpose flour
  • 1 c. brown sugar
  • 1 tsp grnd cinnamon
  • 6 ounce unsalted butter, cut in 10 pcs
  • 2 Tbsp. bee pollen
  • 2 Tbsp. stevia, minced
  • 1 c. rolled oats
  •     Similkameen Peach Cobbler
  • 4 c. fresh peach, quickly poached, peeled, pitted, and, sliced
  • 1 Tbsp. stevia, minced
  • 1 Tbsp. bee pollen
  • 1 tsp grnd cinnamon
  • 1 Tbsp. unsalted butter
  • 2 tsp lemon, juice
  • 2 Tbsp. cornstarch
  •     BC Candied Sea Cucumber
  • 1/2 c. sugar
  • 1/4 c. water
  • 8 piece fresh sea cucumber, diced 1" by 1"
  • 2 piece fresh sliced ginger

Directions

  1. Put the flour, oats, sugar, cinnamon, bee pollen and stevia together in a bowl.
  2. Add in the butter in pcs.
  3. Using your hands rub together the butter and dry mix till all the butter has been added.
  4. Similkameen Peach Cobbler:Mix together peaches, stevia, bee pollen, cinnamon, butter, lemon juice and cornstarch.
  5. Put in an ovenproof dish (approximately 10" x 5" x 2" deep), and fill to no more than 1" from the top.
  6. Cover proportionately with the bee pollen and stevia crust.
  7. Bake at 325 degrees for 35-45 min till the filling starts to bubble and the crust turns golden. Garnish with BC Candied Sea Cucumber.
  8. BC Candied Sea Cucumber:Add in all ingredients to a small pot and cook on medium heat for approximately 20 min or possibly till mix has a syrup consistency.
  9. Pull out sea cucumber and reserve on parchment paper till needed for garnish on cobbler.
