Savoury Won Ton With Beef Filling (Martabak) Recipe

Ingredients

  • 175 gm Pakcet of won ton skins, or possibly 40-50 X 7cm (3inch) filo pastry squares (6oz)
  • 300 ml Sunflower or possibly corn oil, ( 1/2 pint)
  • 2 Tbsp. Extra virgin olive oil
  • 2 lrg Onions, sliced finely
  • 2 x Garlic cloves, minced finely
  • 5 x Cm, (2-inch) piece of fresh ginger, peeled and minced finely
  • 1 tsp Grnd coriander
  • 1/2 tsp Grnd cumin
  • 1/2 tsp Turmeric or possibly curry pwdr
  • 5 x Cm, (2-inch) piece of lemon grass, outer leaves discarded, minced finely
  • 1 tsp Salt
  • 500 gm Lean chopped beef, (1lb)
  • 4 x Spring onions, minced finely
  • 3 x Large eggs, beaten

Directions

  1. Heat the extra virgin olive oil in a wok or possibly frying-pan and fry the onions, garlic and ginger till they are soft.
  2. Add in the other filling ingredients, except the chopped beef, spring onions and Large eggs. Fry for another half-minute, stirring all the time and add in the meat. Mix well and fry, stirring occasionally, for about 15 min.
  3. Let the mix cold for 30 min to an hour . Put the mix in a bowl, add in the minced spring onions and mix well.
  4. When you are ready to cook the Martabak add in the beaten Large eggs to the filling and mix well. Lay a few won ton skins on a flat plate or possibly tray. Put a tablespoonful of filling into each won ton square. Then put another square on top, and press the edges down so which they are more or possibly less sealed.
  5. Put the sunflower or possibly corn oil into a frying-pan and heat it to a high temperature. Fry the filled Martabak for about 2 min each side turn once only.
  6. The casing should be quite crisp around the edges, but not in the middle and the finished Martabak should be flat and proportionately filled with meat almost to the edge. Serve warm or possibly cool.
