Sausalito Shrimp With Fettuccine

Ingredients

  • 2 tbsp. butter
  • 1 - 1 1/2 lbs. Market Day shrimp scampi
  • 1 pound fresh mushrooms, sliced thin
  • 1 sm. onion, minced
  • 1 can artichoke hearts, quartered
  • Cooked spinach fettucini, liquid removed
  • 1/2 c. half and half
  • 1/4 c. freshly grated Parmesan cheese
  • Pepper to taste

Sausalito Shrimp With Fettuccine

Directions

  1. 1. In a heavy skillet heat butter till sizzling.
  2. 2. Saute/fry mushrooms and onions till tender. Add in shrimp scampi and saute/fry till the shrimp is pink, approximately 7 to 8 min.
  3. 3. Stir in artichoke hearts. Add in half and half and Parmesan cheese.
  4. 4. Stir in cooked fettucini; toss to combine. Cook over medium heat, stirring occasionally till heated through. (Fettucini can be served under shrimp mix if you like.)
